Dormé was the only handmaiden in Attack of the Clones who survived past the first scene. Unlike the handmaidens from The Phantom Menace, Dormé has the most lines (outside of Sabé whose main lines were in the role of decoy queen). Thusly, we are able to see more of Dormé's personality.

In both the novelization and the AotC script, Dormé it is cited that Dormé remained behind on Coruscant as Padmé's decoy though Jar-Jar represented Naboo in the senate.

INT. CORUSCANT, SPACEPORT FREIGHTER DOCKS, TRANSPORT BUS - DAY
ANAKIN and PADMÉ, dressed in Outland peasant outfits, get up and head for the door where CAPTAIN TYPHO, DORMÉ and OBI-WAN are waiting to hand them their luggage. DORMÉ is dressed to look like Senator Amidala.

CAPTAIN TYPHO
Be safe, m'lady.

PADMÉ
Thank you, Captain. Take good care of Dormé... the threat's on you two now.

DORMÉ
He'll be safe with me.

They laugh, and PADMÉ embraces her faithful handmaiden. DORMÉ starts to weep.

PADMÉ
You'll be fine.

DORMÉ
It's not me, M'Lady. I worry about you. What if they realise I'm not you?

PADMÉ
(looks to Anakin)
Then my Jedi protector will have to prove how grown up he is.

DORMÉ and PADMÉ smile. ANAKIN frowns as OBI-WAN pulls him aside.

Points of Interest: Dormé overheard Anakin speaking of his lust for power in Padmé’s presence on more than one occasion, but where her mistress ignored or blatantly disregarded it, Dormé’s ears perked at it. 'Padmé looked past the young Padawan for a moment, glimpsing Dormé, who was watching with obvious concern and not even trying to hide her interest anymore.' Dormé has secretly, unbeknowst perhaps even to herself, wanted Anakin.

In the looks she exchanged with him in Attack of the Clones, it is evident that she respected and admired him just as much as Padmé if not more. During the farewell scene, the tears she openly wept at parting with her mistress, illustrates her extreme loyalty and devotion as well as her intense concern and love for her mistress.

Might Dormé find her true love in Vader? It is possible she supported his view of the Empire. 'There are many who believe that the Republic has become too large and disjointed', Dormé stated in the novelization. This lends credence to the projection that she would have supported Vader's crusade for Peace through the Galactic Empire.

Few handmaidens are even glimpsed in Episode III, so it's difficult to say whether or not Dormé was still in her service. I am of the personal belief that Dormé remained a handmaiden until Padmé's death. I also think it is plausible that she would have joined the efforts of the Empire, continue to serve Amidala's family aka Anakin now Lord Vader.
